Hidden Recovery
Brazilian Cheese Bread

Note:  replace cheese with soy/rice cheese to be GFCF


1 lb of Tapioca flour.  (I use Red Mill or EnerG brands)
1 cup of mashed potatos (I use Barbaras Potato Flakes or just boil a potato
or two and mash with a spoon, no oil or milk)
1/4 cup of vegetable oil
2 tbls of butter
4 eggs
1 tbls salt
3/4 can of grated parmesian cheese
up to one cup of milk

1) Mix dry ingredients together
2) In a separate bowl mix wet ingredients(oil, butter, eggs, and potatos)
3) Bring to a boil one cup of milk, cool to almost room temp.  
4) Add wet ingredients to dry.  Add milk to mixture until you dough is spongy
but not sticky, like roll-out cookies.  
5) Form dough into little balls, the size of donut holes.
6) Place the number you want in a baking pan and bake at 400 for around
20 minutes until golden.  Don't cook all of them at once, they do not keep.  
They harden like hockey pucks no matter what.

Remaining batch: Place batch on a cookie sheet, not touching, and place
into freezer with no cover.  Once frozen (about an hour), put into freezer
bags (see, now they won't stick together).
